Are these saddle blocks? Or something else?

The two big black blocks are Losmandy Dovetail Adapters (DA's for short). You can use them to piggyback a second scope on top of your main scope (the main scope will need either a Losmandy DMM or an upside-down DUP plate on top).

I'd call these saddle blocks or saddle plates as it's descriptive of their function. Whether that's what Losmandy calls them, I don't know.

They are dovetail adapters as Eric said. What you are missing are the rings which is what the delprin tipped thumb screws would go into to adjust and hold the scope. Losmandy DA's Losmandy Rings

Here is a picture of a pair of them with 3-point rings mounted on my C8's top rail.
