What mounts have a pointing model in the software that helps with goto , when you cannot use the north star or polar scope.

Celestron has the 'all-star' which doesn't require polar align. It's somewhat backwards compatable dpending on on your HC and MC board firmware rev.

We're going to assume that you mean polar alignment. Any mount equipped with the latest Gemini Goto system has a PA routine that uses a star close to the meridian and celestial equator.
