Bought a used pair of the 25x100 but it didn't come with the screw or bolt that goes on top of the tripod connector, which connects to the long chromed bar in the center.

Its larger than 1/4-20, any idea what size it is exactly?

Go to the hardware stores with your bino or tripod connector and find it out there...

Mine is 5/16" 18 tpi.

Ok mine is a Celestron, I guess they are generic. I don't want to bring it in the store as the big hardware stores also sell Celestron binos and I don't want the hassle of getting pass secuirity or the cashier without a receipt.

It is up to you... when you said it is old so it is likely things may be different then vs now....

Mine is from a very early run (perhaps the first bunch from Celestron), purchased around '05 (?).
