With My Sky or Sky Scout can I input a Messier or NGC object first and then the gizmo takes me there? Or do they just tell me what I'm pointing at? Also do they have a decent number of galaxies and nebulas on their database. On the homepages it seems to be almost stars and planets.

They both have an impressive catalog. BUT keep in mind that these gadgets are made for approximate location (with in a degree) and will most likely not give you a pinpoint location fine enough to get a small galaxy or nebula into your EP. If you are liking the idea of having one to show you where things are at but want the accuracy to go with it, you are better served in buying a GoTo scope. If however, you would like a gadget to point out where objects are and tell you a little about them while you are star hoping to them with your regular scope, then they are great. I can hook my MySky up to my scope and it acts as a point and shoot GoTo system (I have an LX200R). Celestron owners can have similar success.
My suggestion is to get a Telrad for your scope and have your mySky/SkyScout as a learning tool and not as a finder.

I already have a push-to orion 12" inteliscope Dob. and 2 Rigel red dot finders. This idea of My sky would be to apply it to my 180mm/7" SW Pro Mak on the Giro mount.

Does the SkyScount or mySky provide the lat/lon when it locates an object? Are they good devices for a Grab & Go setup using an Alt-Az mount and a good red dot finder?

Not quite sure what you mean by and objects "lat/lon"... RA/Dec? Altitude/Azimuth?
