Might as well have to most oft recommended and used software (for Windows)

K3CCDTools, useful in capturing the AVI file for later stacking. Version 1 is free, 2 available for nominal charge:
K3CCDTools

Registax, one of the most used image stacking programs. Does a good job aligning, stacking, and processing of images. Handles multiple AVIs, individual images, etc. The author, Cor, is a frequent visitor on CN (username: Aberrator)!

Down here in Jacksonville Florida we just had our 2nd annual urban star party for NEFAS. Michael O'Conner was our guest speaker from the Jet Orbit Observatory. He recommended several different types of software for CCD imaging - some free and some not. Here is the link: http://www.ccdware.com/resources/

Some programs that stuck out were:

CCDSoft V5
MaximDL V4

Saturn5, no. But you can buy them already modded. The Atik range is one such.

Useful link for dob owners, or other non-tracking imagers.. some hints for image processing as well.

TDI - Time Delay Integration

TDI a $5 word that translates into a method of imaging that uses a SBIG camera and a scope with no mount motors (i.e. DOB), or with the mount motors turn off. You only need your mount to not fall over - there is no tracking to do poorly. Basically, you point the scope/camera at a portion of the sky, and let the sky roll by. It's very easy to do well...

Note: The software included with SBIG cameras now has TDI imaging built-in. You can, but do not need to use the software referenced in the above document.

Charlie et al,
I notice that many of the tuts on the thread are no longer active. There are however many fine new Photoshop resources popping up.

Don Waid has released a DVD as has Adam Block, Jerry Lodriguss's DSLR and Wodaski's Zone disks/books both cover PS to some extent. Starizona, Ken Crawford and Ricky Bennion have some nice free videos. Ireland's 'Photoshop Astronomy' is definitve but text even at its best is harder to apply.

My tutorials, both free and ppv streaming download have moved to http://www.ip4ap.com . Like some of the others, we see the power of visual instruction as a way to help you climb the learning curve quickly!
