I guess I'm a little confused on how to accomplish this. My CGEM 800 should be here next week and I'm looking to possibly get an 80ED to mount side by side. Since the C8 has the D mount and the 80ED the V, can I use this ?
Or will I need to replace one of the saddles with a V saddle? Is there a cheaper option for a side by side mounting?

That ADM SbS is probably one of the best options. Other suitable SbS setups are available from Losmandy and Casady. The ADM setup can also be had with the neat ADM combo saddles (capable of mounting either D or V style dovetails).
You will definitely spend more money overall with the heavier D type mounting. Another option would be to go with an all V type SbS and replace the rail on the C8. ADM and Losmandy have V series stuff as well plus Scopestuff has a less expensive version.
Edit: removed dumb comments about ADM and the dual type saddles ... it helps to actually read all the description of a product.

I have these two items on order right now, should be here by Monday, I am planning to mount my ED80 side by side with my C9.25 unless that proves to be too unstable and then I will mount the C8 instead.
1. ADM D SEREIS SIDE BY SIDE - LSBS-DUAL $249 2. ADM V SERIES UNIVERSAL DOVETAIL BAR WITH ADJUSTABLE RINGS - VDUPR-125 $99
That is all you need to make this work on the CGEM mount.
I got the dual plate on each end of my side by side bar just so I could mount any configuration of losmandy or vixen dovetails. But you can also email or talk to Anthony and get him to custom fit a vixen saddle on one side for your ED80 and a losmandy on the other side for you C8 and that would be lighter and cheaper, about $189 instead of $249 if I recall correctly.

The D/V combo would be perfect, but I didn't see it on their site. They had the combo one you have listed.

Well, it turns out that he is going to be offering a D/V side by side mount 
Now that I know this, I feel more comfortable getting my 80ED.
