I just purchased an Orion EON 80mm refractor to go with my CPC1100. It has a built-in doveplate, so for now I can mount it on my piggyback adaptor. Ultimately, though, I would like to use a pair of guide rings to move the scope around like a finder scope.
Is this an advisable setup and if so, what Losmandy ring set and mount/plate would be best for my CPC1100? I think I've read where 125mm rings would be a best fit ... ?

125mm rings would give you the most flexibility in terms of pointing but you will have to watch for interference between the adjustment bolts and the finder scope(s) you have. You can also use 108mm rings.
As for a mounting bar it depends on what else you might want to do with it (or what else you'll want to mount on it). Some of your popular choices are Scopestuff (simple lightweight and one of the least expensive), ADM MDS, ADM/Losmandy V (Vixen/CG-5 compatible), or ADM/Losmandy D (widest, heaviest and capable of the most options).

Thanks, I've really been stressing over this. For a long while I couldn't even commit to any refractor for fear of later incompatibilities for what all I wanted to do with it. I finally just gritted my teeth and went with the Eon 80mm hoping I could add guide rings later. Any info helps!
Do these mounting bars run the entire length of the optical tube and use pre-existing bolt holes, or do you have to drill new ones?

What you want is an ADM MDS (Anthony Davoli Machining Mini Dovetail System). This is a bar that extends the length of your OTA on the top. The mounting brackets fit exactly for screws already in place on your tube. Once the bar is in place you simply slip the mounting rings onto it and secure with their wing nuts.
You'll also need a set of counterweights. ADM sells those as well. A dovetail bar like the one you mounted on top goes on the ventral side of your OTA. The countweights are attached with a bracket that slides onto this rail. You can move the weights back and forth on this lower rail to achieve balance.
Anthony is a great guy. If you're still not clear about how all this works, just e-mail him and he'll walk you through what you need.
This is not to say you can't get Losmandy, Celestron or Starizona set ups that work just as well. I happen to have ADM on the top side of my CPC and Starizona on the bottom, with Losmandy counterweights because they happened to be on sale at one vendor when I went looking for them. All of these work well, I just happened to be quite impressed with Anthony's attention to detail and quality service.

Another question ... should there be any concern about the guide scope possibly falling out from the rings as the CPC slews around into different positions or will it stay locked in ok? It looks like maybe the lens shade and/or the focus knobs could catch it first even if it did slide!

If your guide scope slides in the slightest it will be because you don't have the bolts tightened down enough. A guide scope and autoguiding imager must be mounted absolutely rock solid or you'll suffer from flexure which will show up as lousy guiding (oblong stars etc.).
Those 3 point bolts with delrin tips can be tightened down a surprising amount before there is any chance of deforming the aluminum tube of your EON.

I have the EON 80 mm mounted on my CPC 800 with rings . I'll try to get some pics posted this weekend , so you can see how it would sit in the rings .
