I've been looking at the RC8, Edge HD 8", and similar OTAs, and I keep ending up with the same question - What options are there for mounting a guidescope like an AT66 on one? I have a set of adjustable guidescope rings that fit the AT66 nicely, but are there rings for these other OTAs that I could simply bolt a guidescope bar to and call it a day like I did with my Newts? Not really interested in an SBS configuration if possible to avoid it. I'd prefer to stick with an over/under.

There are plenty of dovetail bar options for C8s. You can drill the bars for fixed rings or use rings mounted on saddles (most versatile but also extra weight).
The outstanding question is what bolt points does the HD C8 have? The dual bolt points (1.75" apart) are the standard on most SCTs. C8s often have a pair on the rear cell and a single bolt point on the front cell.
For examples of the type of choices you have take a look at ADM link. Anthony has 3 options ... an MDS bar (lightest), V series (Vixen/CG-5) very versatile, or the big robust D type plates which are probably overkill for mounting the AT66.

If you are looking at the AT8RC it has a Vixen dovetail that runs the whole length of the top of the OTA. You just get a Vixen accessory adapter (female) and bolt the AT66 to that and slide it on the Vixen dovetail and tighten the screw on the side of the adapter. Since the OP's mount appears to be an LXD75 the idea of using the vixen rail on the AT8RC may not fly ... he'll likely be using the vixen rail to mount the scope to the mount.
He could however use the same idea only with D type saddles to handle the rings. It will just look a little unusual with the larger rail/plate handling the guide scope and the smaller rail attaching the whole thing to the mount.

LXD75 is out of the picture. Looking at CGE or equivalent. I need to clean up my signature.

If you already have the rings, you can get Vixen or Losmandy saddle clamps from ADM.
I install an ADM Minirail on top of my SCT and use Anthony's rings for my piggyback scopes. I used a WO66 - your AT66 is ideal.
