I can't really answer any of your questions about film, but I think I have the answer to a few of your DSLR questions that haven't been addressed yet:

Regarding the filter on DSLRs: my understanding is that this only causes a problem on Hydrogen-Alpha emission nebula. The general approach, if this is important to you, is to "MOD" the camera to remove the filter. You can either attempt this yourself, or send it out to be performed by a professional. It does have an impact on how the DSLR takes daytime photos afterwards, if you don't intend to use it as a dedicated astro camera. A couple of useful resources on this:

Yes, its common to use individual color filters in digital, and then combine them in post-processing. This is par for the course for higher-end CCDs, which are black and white only.
