Like the name of the post reads, It would be nice to know what binoculars, without restriction in price or size you'd like to own.
If the reasons are for actual experience or just because you hear a lot of good things about them is equally valid but would like you to express them.
For me, I would like to own the Swarovision 8x32, a perfectly portable size with more than astonishing reviews of experienced observers like Piergiovanni from Binomania.
I have an excellent experience with the 10x42ELs, but those are a bit heavy for long walks, I've been looking for a lighter pair and my dad has already kidnapped my Leica 8x20 that I have to admit I ultimately bought for him.
Apparently, the Swarovisons are a big step over the older EL's, and that have to be seen since the EL's are excellent.
On the other side, I don't know if I would buy them since I've already have the Docter Aspectem 40x80ED, but the 82mm Kowa Fluorites have been in my list for some time, I just wish they improve some specific details like their edge performance and a wider Afov set of eyepieces in the range of 30 to 40x. Unfortunately I have not had the pleasure to look trough a sample...

Given my current location, my want list only contains binoculars that are at least reasonably portable. You have me wanting the Docter Aspectem 40x80ED, although it first caught my eye over a year ago after finding it on an eBay sweep. I also have the Zeiss 20x60 S on my list since I really like the concept if image stabilization in a binocular. The Nikon 18x70 is another one that has my interest. There is a nice one on eBay right now but I'm not ready to commit to one at this point.
I've thought about some of the better BT offerings but I'm not really sold on the concept yet.
The Canon 10x42 IS already on my short list. I'm going to sell some stuff in order to raise the funds to get one. And as much as I love reading your impressions of the Fuji 40x150, I can't see myself using something as large as that. Not here in the burbs anyway. Maybe when I buy a home in the mountains...

My Nikon 18x70 never fails to stun me.
And it is still very easy to carry and mount. Unbelievable performer.

if I could only keep one that I have-the SW
my favorites are the miyauchi 5x32, miyauchi 100mm, leica 10+50
least used-vixon and miyauchi 22x60s
most used-zeiss

Smark, beware of used Docter 40x80's. There was an older version that looks almost the same, but its Eps are different and have only 10mm of eye relief, so I would be very hard to take the whole Fov for many people or to use glasses. Also, there is a non ED version, so the color correction is not perfect. I say this because those Docters are a recent version, and I don't think there are too many used for sale. The things that make this Docters amazing are precisely the things that got changed for the new version...

I think I would love to get my hands on the Fuji 16x70s and the Canon IS 18x50s or 15x50s. Money no object , would love to explore with the Fuji 40x150s or to go to easy to carry maybe the EL 10x42...so many choices...have heard many good reviews from all of the above. I guess these could fill some gaps I have and go towards satiating my lust for some fine optics.

Prob the docter 40x80, are the ep's removable so thy can be used with a scope also?

No Daniel, the eps are fixed, but you can buy the same eps for telescope use.

This really is a very difficult question - if no restriction on price then there are a lot I'd like to try! 
Here are two that would be high on my list:
Zeiss 20x60IS - I've always liked hand-held viewing, and these are probably the ultimate pair for that.
an alpha 8x32 - ideal travel binocular; I'd still want to try before I buy.

Nikon 18x70 and Docter 40x80, both because I read such good things about them here.
I've bought a lot of new binoculars over the last year or two, most of them because I've read good things about them here on Cloudy Nights.

Fuji 45 deg. inclined 25 x 150 ED.
Nikon 18 x 70. I have prewar Zeiss 18 x 50mm Delfort, which is a Porro II. Good for quick moon/ Jupiter moon glances in a light polluted environment, with elbows braced on a cartop. But it is not coated, nor is it widefield.
Nikon 10 x 70 red stripe, at least for comparison with similar equipment.
Perhaps take the time/$$$$ to make/have made an erect image 2-mirror pseudo roof prism phantom roof ED or flourite f/6 or 6.5 , with (fixed) 90 to 100 deg deviation, 120 to 180mm. binocular refractor, probably with the unilateral IPD adjustment ff. WW II Zeiss 25 x 100 or 12 x 60, but not neccessarily with real time ( to simplify construction) 2:1 eyepiece-"prism" linkage IPD mechanism.

I have been trying to locate one for years. I wish Pentax would reintroduce this version.

And it wouldn't cost a lot, maybe. I'd get one faster than the blink of an eye.
Here's what I would like to own:
Nikon 12x50 SE or Swarovski EL Swarovision 12x50
And if someone gave me a Swarovski SLCnew 15x56 WB, I think I could manage.

If there were such a model as a Nikon 15x60 SE,with the same AFOV as the existing models,with around 17mm of eye-relief, I would be very happy to own one.

I think a Nikon prostar would be one of my wants, but the Nikon 18x70 looks more usable with higher magnification.

About the only models that I kind of find tempting at the moment are the Swarovski 10x50 ELs, 10x42 ELs or the new Zeiss 10x42 HTs. However, given their high cost and the fact that these would just be nice-to-haves and not must-haves, and given the other binoculars that I currently have, I doubt if I'll if I'll get one. I'm pretty content with the set I have now.
