Hey all, I've been researching my little heart out and just can't seem to find a consistent answer for whether many of the CCD Video Cameras out there will actually work well on a Mac without tons of work arounds. Is anyone using anything they have a particular fondness for? I'd love some suggestions. Its gotta work on a MacBook Air w/ USB or Thunderbolt connectivity.

Well, before Astro IIDC closed doors it was the best utility for acquiring and processing digital video on a Mac. Most supported cameras are firewire, though. But usb support for cameras like the Pt Grey Chameleon and Firefly MV were added a year or two ago. You also might be able to get a firewire port hub that plugs into the Thunderbolt on the Air.
But you'd have to look for other software to run the cameras on the Mac. I'm only half way through my first cup of coffee, or I'd list the ones I know of. Maybe later, if someone else doesn't beat me to it.
You should also consider adding Windows via Parallels or VMWare Fusion if you'd like to run windows-only cameras on the Mac.

I am a Mac guy, iMac-Macbbook-iPads-iPhones, but after I bought my telescope last month I learned that I would have far fewer headaches if I just got a Win laptop. I picked up a 17" HP at Costco for $500. It seems astronomy is a Windows world.

Before AstroIIDC (no longer available) I used BTV Pro to capture images with my Toucam on old Powerbook. It looks like its still around and upgraded, at least in Beta, to Mountain lion:

And you can use Keith's Image Stacker to stack and process images.
