I just upgraded my old NexRemote software (that came with my CPC1100) to v. 1.7.22 and I notice this has the latest GEM and NXS firmware to version 4.21 - I also have a newer Nexstar+ HC with my CG-5 mount and I realize now that I never saw the CD or it did not come with NexRemote software. So my question is, can I use my NexRemote software GEM 4.21 plugged into the newer NexStar+ HC or is that a non-starter? Is there another NexRemote software for the newer + HC ? The firmware on my NexStar+ HC is 5.20.

NexRemote will work with the new Nexstar+HC, it will emulate the old 4.21 HC. There isn't a Nexstar+ HC version for NexRemote and it may not be trivial to do one because there are a lot of changes under the surface.
