I've tested 13 different 8x binoculars. Almost every one of them has a wider fov than that. the Oberwerk 8x56 is also 5.8°. Most of them are about 6.5°. Several are 8. So, if you are going to drop to to 8x, that would be about as narrow an fov as you could get. But, and you made this point, it's not all that much narrower than some 10x binocs.

The fov of the eyepieces is nearly orthoscopic, so i would imagine filed aberrations are well suppressed. I wouldn't expect at aperture to be full, few binoculars are.
