The Veil Nebula will be difficult due to its sheer apparent size in the sky. I use my piggyback scope for this, as my 8" SCT can't grasp its propensity. As for the Cat's Eye, I would reccomend your 8" due to the aperture. You should be able to see it from even dismal skies. Also, the Lagoon nebula is fantastic.... Though with an 8", you'll need a sufficiently wide field eyepiece to view it in all its beauty (IMO at least).
