I shot NGC7000 two weeks ago and IC5070 this past weekend

I had hopped it wouldn't be this bad

but I figured I'd pots it and ask what you guys do.

I tried in DSS just the single stacked images of both

Mosaics are tough and DSS is not suited for it at all.  Process each stack separately and then use Microsoft ICE (freeware) to combine into the mosaic.  Note also that ICE can use Tiff files so you will not be subject to an 8 bit image.  Your data above looks pretty good and I am positive that if you use ICE you will be quite pleased with the result.

Wow, that's  huge difference, have to take a look at ICE

eventhough I'm spoiled now with APP.

It was suppressing how easy it was.

I watched a video on YouTube and just followed along.

Now I have to work on cleaning up some of the artafacts that calibration didn't get but considering I live about 5 miles (as the crow flies) from Downtown San Diego and I'm pleased so far.
