What do you mean by disable?  Do you mean "turn off" so the mount can keep tracking until it collides?  That's not a good option, and the mount doesn't allow for that.  You have two choices, flip or stop tracking.

You can control the behavior in the Settings menu.  The manual gives the following;

"5.4.7. Meridian Treatment
This function tells the mount what to do when it tracks past the meridian. You can tell the mount if it
needs a meridian flip and when to do it.
     'Set Position Limit' will tell the mount when to stop tracking or to do a meridian flip. The limit
can be set at from 0° to 10° (40 minutes) pass meridian.
     'Set Behavior' will determine if the mount will stop tracking or perform a meridian flip at the set
position limit."

So it cannot be turned off (disabled) but you can control what it does.

No it doesn't.  You just need to set the ASIAIR to do it before the mount does.  In the ASIAIR, set it to do a meridian flip at, say 5 degrees past the meridian.  Then set the mount to stop tracking 8 degrees past the meridian.  The ASIAIR will now perform the flip before the mount hits its limit, and the mount will still stop tracking, saving your mount and pier, just in case the ASIAIR has a problem or crashes.
