How about some Haydn -- his magnificent setting of "The heavens are telling", from the Creation.
Or if you prefer German, "Die Himmel erzählen die Ehre Gottes". Thanks to Google, I stumbled onto a setting by Heinrich Schütz of the same Psalm, that could be my new favorite. And one can hardly leave out Bach -- the opening chorus from Cantata #76 is classic.
More intimately, "Die Sterne" by Schubert.
