Can a deforked ETX90 OTA be mounted on, e.g., a Skywatcher AZ-GTI Wifi Head? Is it possible to get some kind of bracket or tube rings that fit the ETX90?

¡You will have the best of both worlds!. I used both 1/4" nuts from the base of the OTA, and attached a rail that allows me to use it on a GEM mount (EQ2) that I share with a refractor.
The CG falls just right, where the plastic part ends.
It is a good opportunity to put a bit of rubber foam inside the troat under the tube -where the two 1/4" screws are inserted- since light enters there when we look at the Sun, the Moon or Jupiter when we are taking photos, and loses contrast.

I don't have pictures at hand to demonstrate right now, but I do the same as Edgardo (above) with both my ETX90 and ETX125. I have a Losmandy rail which I can mount either to, with a 1/4 x 20 screw.

 

Then I slide the rail into the saddle on my GEM and I'm good to go!

What ring did you use to attach the dovetail? My OTA measures 103mm OD.
