Why does the SkySafari keyboard quit working if I turn night vision reddened mode on my Pixel 6 Pro?

Good question.  Call Simulation Curriculum!  Yes, they DO answer the phone! They've helped me via a phone call many times.

Figured it out in case anyone has this same problem. Go to settings, system , keyboard, and select SkySafari keyboard along with any other keyboards you want available such as Gboard. If you have more than one keyboard checked a small icon appears on the bottom right of the screen. When you click on it you get a pop-up that lets you select the keyboard you want to use. On my phone, Pixel 6 Pro, only the SkySafari keyboard works in night mode.
